Half of our name
The third wave of coffee. The third wave of coffee.
Treating coffee not as a product to rush through, but as a craft. That is the Third Wave.
01A short history
Three waves, one direction. Three waves, one direction.
Coffee people talk about three waves. Each one changed what we expect from a cup of coffee.
-
First wave
Coffee for everyone
Coffee became an everyday product in every household. Convenience and availability came first.
-
Second wave
Coffee as an experience
Espresso bars and coffee chains turned coffee into an experience, with new drinks and a culture of its own.
-
Third wave
Coffee as a craft
The attention shifts to the bean itself: where it comes from, who grew it and how to let it taste its best.
THIRD. chooses the third: attention to origin, producer, roasting and brewing.
02How we work
From farmer to barista. From farmer to barista.
-
01
Origin
We trace our beans back to their origin.
-
02
Producer
Direct-trade beans from farms we trust. We honour the farmers and the soil.
-
03
Roasting
Specialty coffee roasted in-house, with respect for the careful roasting process.
-
04
Brewing
Our baristas weigh every dose and time every shot.
03Roasted in-house
The bean in our own hands. The bean in our own hands.
By roasting ourselves, we keep the whole journey in our own hands: from choosing the bean to the cup on the bar.
It lets us do justice to every bean, and honour the work the farmers did long before it reached us.
04Brewing
Weighed and timed. Weighed and timed.
Our baristas weigh every dose and time every shot. Every espresso is a new chance to reach perfection, and every filter coffee a chance to let the bean tell its story slowly.
Taste
Every cup is a tribute to that journey. Every cup is a tribute to that journey.
